Celebrate Thanksgiving With Mobius

Thanksgiving is right around the corner— whether you’re celebrating with family or friends, hosting a large group or attending a small gathering, it’s always a great time to get together with loved ones, share what you’re thankful for, and indulge in delicious food around the table. If you’re looking for dinner inspiration beyond turkey and mashed potatoes, check out these delicious recipes, straight from Mobius books, and get your copy (or copies) today!

To Start:

Black Rice, Sweet Potato and Orange Salad with Toasted Almonds

This easy, delicious, and vegan (shh) salad from Ella Mills Woodward’s Deliciously Ella is a great way to incorporate a classic (sweet potatoes) into your holiday while keeping the start of your meal light and bright. The unlikely, but surprisingly seasonal, flavor combo of black rice, oranges, and almond makes for an excellent starting dish.

Fast Granary Rolls

While it’s totally fine to buy rolls for Thanksgiving (King’s Hawaiian anyone?), if you’re feeling adventurous, try making your own with Mary Berry’s recipe for Fast Granary Rolls from Fast Cakes. They use granary flour, a malted bread flour that will give your rolls a nutty flavor. Buy it online or use bread flour instead.

The Main Course:

Piri Piri Roast Chicken

We personally think Turkey is a bit overrated— and if you’re looking to switch out your Thankgiving turkey for a different bird, then we highly recommend Donal Skehan’s Piri Piri Roast Chicken, from Meals in Minutes. The sweet smokiness of the Piri Piri sauce will pleasantly surprise your guests, and with only 15 minutes of prep involved you’ll be able to focus on your company and not your kitchen! Don’t want to make your own Piri Piri sauce? Try this one, created by Donal himself!

The Sides:

Cauliflower Mac and Cheese Bake

Donal gives us a lovely take on a true American classic. He adds cauliflower, he says, “not as a vague attempt at making this feel somewhat healthy, but simply because it works!” And wow, does it work. This dish was featured on The Today Show, and you can find the recipe in Meals in Minutes, or online here.

Quick Kale & Mushroom Risotto

Also from Meals in Minutes, this is the perfect side dish to make if you’re hosting. Instead of being tied to the stove the whole time like with a traditional risotto, you add the liquid all at once and let it simmer – an ideal solution if you’re balancing basting, mashing, roasting, baking, and entertaining all at once.

Garlicky French Beans with Wholegrain Mustard and Truffle

We know what you’re thinking— but don’t panic! The truffle is optional if you feel like fancy-ing up your dish for the holidays, but the beans are still heavenly without it. This crispy green bean dish from Deliciously Ella makes a great holiday side, and is a healthier swap for traditional green bean casserole.

Dessert:

Mini Apple Crumbles

Served warm with vanilla ice cream or by themselves, these delectable little apple crumbles from Deliciously Ella are a great alternative to a full sized apple pie, and will fit perfectly on your dessert plate along with the rest of the Thanksgiving goodies.

Almond Bakewell Tart

If you’re looking for an easy dessert that will wow your guests (or your host if you’ve been tasked with bringing a pie), Mary Berry’s Almond Bakewell Tart from Fast Cakes is your answer! Almond pastry cream sits atop of raspberry jam and is so delicious, you can get away with pre-made crust if you don’t have time to make your own.

Spiced Toffee Traybake

Pumpkin pie spice, molasses, cinnamon… nothing shouts the holidays quite like the flavors in this easy cake from Fast Cakes! We suggest portioning them out into squares before serving, but they can be served right from the pan as well.
